Mrs Volfies Fish Puff
Making Left Over Potatoes 
AMAZING!


                                     
 Ingredients
 -One Tin Each Sockeye Salmon
and Chunk light Tuna
-2&1/2 cups left over mashed Potatoes
(NOT INSTANT)
2 bunches of green onions washed trimmed and cut into small rounds.
2 tsps fresh minced garlic.
(NOT POWDER)
1/2 cup Parmesan cheese
( divided in half evenly)
1/2 Cup Helmans Mayonnaise
( The GOOD stuff )
2 eggs
1 Cup bread crumbs
2 TBS butter
( you guessed it REAL BUTTER)



 Set aside Bread Crumbs, half the Parmesan and the butter. Mix the rest of the ingredients and whip it..By Hand...whip it GOOD!  
( couldn't resist)
Turn into a buttered casserole dish.
Combine your bread crumbs, butter and other half of Parmesan cheese and mix either with fork or  food processor..to a fine moist crumble. 

 Crumble evenly across the top of your fish puff and cover with lid or tinfoil. 
 When their noses bring them to the table..
It's ready! 
This is an economic way to make a delicious dinner out of leftovers and pantry findings..but their taste buds will think you have created a Gourmet DELIGHT!

Pork Pies!

A Taste Of Great Britain!


 These days..food..REAL food has taken a back seat to take out and instant prepackaged junk. YES JUNK!! Stuff so full of preservatives and chemicals, that it is a shadow of it's former self!
You know what I mean? Meat pies partially cooked then frozen to be reheated in the oven in 15 minutes?
I heard my father talk about Pork Pies all my life...but I have NEVER had one!!
The closest I came was a bakery pie filled with hamburger and gravy. It was good...but Pork pies have HAUNTED me!
So I looked them up..and much to my STUPIFICATION ...they are SO EASY a CHILD could make them!!
I feel mortified that I..(ME ..the woman who thinks prepackaged foods are an abomination)..did not 
know just how simple and WONDERFUL these really are to make..and to EAT??
OH MY GOODNESS! Can you say party in your MOUTH??
So here it is folks..A little time consuming..but as simple as ordering fries! ( or almost)

You will need:
one pound of lean ground pork
one pound of bacon ( mine is home raised and cured so I recommend you use ham or pea-meal bacon)
1 cups bread crumb if store bought
(two if you just threw some bread in the food processor and made your own)
1 tsp ground black pepper
1 tsp ground garlic powder
2 cups jellied broth
( Don't panic get your favorite meat stock and a package of plain gelatin and mix it up in advance.)

Pastry:
Easiest pastry you will EVER make..this is not for flaky recipes..this stuff is tough and NEEDS to be.

5 or so cups of AP flour with 2 tsp salt
2 cups boiling water
1/2 pound of lard
 ( NOT SHORTENING that shit will kill you)
and one egg
Got it? Good!! Lets do this!!!

take your boiling water add the lard and let it melt to liquid.
Stir into your bowl of flour and salt.
If it is too dry..add some hot water.
mix it up and knead it into a ball..put it in the fridge to chill.
This is called hot water pastry.
( now that wasn't so bad was it?)

The filling!
Throw you ground pork into a bowl.
mince you bacon and add it.

Throw in the Garlic, Pepper and Bread Crumbs

Get your hands in there and mix it REAL well!
That's your filling!

Now Let's make our shells!
remember..these are independent little suckers that need to stand on their own..so don't worry ..you can't over work this pastry..well not in 10 minutes you can't! ;D
Flour your board and take a piece of pastry roughly the sized between a golf ball and a tennis ball. Shape it into a hockey puck shape.
Take a normal everyday drinking glass and press the bottom into the pastry about half way down.
 Then Turn the glass over and begin to shape your pastry around the glass .
When you have a nice cup shape with no holes in it..roughly the same thickness all the way through..trim the edge with a sharp knife by turning the glass.
And there it is!!!
set on a cookie sheet with a piece of parchment paper laid on it and repeat..saving just enough pastry to make lids for you pies!
Now roll out the remaining dough.
And Use the TOP of the glass to cut your lids!

NOW!
Mix the egg in a half cup cold water and beat it up.
set aside with a pastry brush and get your filling from the fridge!
Making meat balls a TINY bit smaller than your balls of dough were,
gently press them into the shells.
Brush the rim of one of the pastry shells with egg wash
and pop a lid on..push it slightly inside the shell.
Fold the edges of the shell inwards a bit..and pinch closed!
Preheat your oven to 300 Degrees Fahrenheit
and brush egg wash all over the tops and sides of your pies.
Slide the cookie sheet with your pies into the oven and slow bake for 1&1/2 - 2 hours. Until golden brown and you can't STAND the delicious aroma ANOTHER SECOND!
remove from the oven and feel free to eat one while hot...HOWEVER...
these are meant to be eaten cold also..so poke a hole in the top of each pie..about the size of a pencil. ( Don't USE a pencil!)
and pop into the fridge to chill. 
               Gently heat up your jellied broth until just melted..NOT HOT.
Then pour it into a gravy boat.
Take your cooled down pork pies out of the fridge and pour the broth inside the hole until it over flows.
Chill and eat..or heat and eat..the choice is yours..but you may NEVER buy store bought meat pies again!

Newest and Best Yet Granola Recipe

Made In the Dehydrator!

Hey There Folks!
Yesterday I made a new Batch of granola..this time I did it in the
dehydrator with more consistent results! The Ingredients are as follows...
5 pounds steel cut or old fashioned rolled oats
2 cups honey
2 cups seeds and/or nuts of your choice
2 cups fruit
( if fruit is raw diced small..if it is dried
add AFTER your dehydrate or toast)
2 tsp cinnamon
1tsp salt
Enough butter to grease your  bowl.

Grease the biggest bowl you have or use a canning pot.
mix oats and nuts ..then sprinkle cinnamon and salt on top.
( this is so it doesn't stick to the buttered bowl sides)
drizzle the honey over top..be sure and get it all!
Toss mixture until evenly coated.
Line each dehydrator tray with Parchment if you don't have the proper screen size.
Parchment is washable..when finished just wash it with warm soapy water..rinse and hang to dry! So don't be afraid to use it!
Set you machine @ 135-150 and dehydrator for 8 hours..rotate tray if needed.
If you are using your oven..use parchment on cookie sheets..set oven at 150-175 and make sure you stir and turn over your granola Frequently.
If using fresh fruit..granola is done when the fruit is rubbery. If Using dried..add AFTER the granola come from the oven.
When granola is cooled..place in Jars or bags.
This recipe make two 1 gallon Jars!

A Sweet Fall Treat!

Sweet Stuffed Acorn Squash!!

This sweet treat is a simple dish that will wow any company, when set on the harvest table!
Simply Cut an acorn squash in half and hollow out.
Place in a baking dish.
Then dice sweet potatoes into the cavity.
Add a dab of butter..a dash each of salt and pepper..and a drizzle of molasses!
Cover with Tinfoil and bake until tender!
Can be scooped out and mashed on the plate or in a bowl..or garnished with a sprig of parsley and served individually a half squash in a bowl to the side of the plate with a spoon!
However you do it..it will be a hit!

Strawberry Season!

Strawberry Jam!!

It's July Second! And strawberries are in Season!
That means It's time to make JAM!!
I made jam and YouTubed it the other night..so today my young friend Nancy came to learn how and to help make Jam.
She did a Bang up Job with very little instruction!

Here is How we made Strawberry jam!
Start with FRESH local strawberries!



Wash them, remove the tops and slice.


Wash and Rinse your Jars and put on a parchment lined sheet in the oven at 215 degrees Fahrenheit for a minimum of 20 minutes..Leave in oven til needed.

Likewise, wash rinse and boil new jar lids for 5 minutes..then reduce heat and leave in hot water til needed.


Crush strawberries with a masher or food processor..
Measure out the amount of prepared fruit that is required by your packaged Pectin. Likewise..measure out the required amount of sugar and set aside.

( NEVER double the recipe  on the box..you jam will NOT set)

Pour your measured fruit into a large sauce pan and begin to heat on medium to high..stirring Constantly..In a small dish scoop out a 1/4 cup of sugar and mix in the pectin..then stir this mixture into pot of prepared fruit...

When the mix begins to heat..add the rest of the sugar.
Continue to stir until it comes to a boil..turn in down between high and Medium and continue to stir while it bubbles for 5 minutes. At this point you can add a half teaspoon of butter to help reduce foaming.


Ladle into hot sterile jars..3/4 of an inch from the top rim of the jar.  Be sure to wipe rime of jar with a clean moist cloth to ensure a good seal..put on hot lid and screw ring down firmly.


Place hot jars of jam onto a folded towel and cover to let cool slowly.
You will son begin to hear a series of "pings" This is the lids popping down and creating a vacuum seal.  IF the lids are not all down after 12 hours..( this can happen is the jam or jars were not hot enough when filling the jars)
Process in a boiling bath canner for 15 minutes and remove to folded towel and allow to cool again.  IF after THAT step the lids STILL do not "ping" down..then just refrigerate or freeze.

Summer begins in Earnest!

Very Busy Weekend!

This weekend was very busy..We had two goats that were no longer " pulling their weight" so they needed to be "harvested"  Also a dairy goat farmer let us know that his most recent kidding produced a lot of Male kids..and that we could have up to 6 for $10 each...so we bought 3..one to eventually be our Stud...

the other two we "banded" and will grow up to be harvested in the spring.  At the same time we arrived home with our new kids..my two nephews and eldest son came for a visit!

In the mean time..we harvested the two older goats..
and Howard and my nephew Mikey went to work butchering.

After That was done and the roasts rolled..and the extra ground..We made Sausages! Breakfast style and supper style..21 METRES!!

We ended up with 6 Roasts, 9 packets of Ground meat and 21 metres or 24 packages of sausage!
Andrew and Howie assembled and added two new supers to the hives...
 
The little black hen hatched out 12 eggs and because they were unexpected and not planned for..we sold them to a neighbour.
 
some have Green dots on their heads to tell them apart from the meat chicks they were cuddling up to until they were taken to their new home.
And at 47 years old..I find myself bottle feeding babies again 4 times a day!
 


But it is a labour of love..even if SOME do get Jealous!
And Still I managed to Plant some cayene
Peppers, Celery,Basil and Asparagus!


It WAS a lot of work..but we had wonderful help..and we still managed to have a lovely visit !! All in all? we had a WONDERFUL weekend!

Today after a brunch of Goat sausage patties, eggs, toast and stir fried steak with pepper mushrooms and onions...my eldest son and my nephews left..and Left ME.... counting my blessings and knowing what a LUCKY woman I am!!
