Potatoe Cheese Soup!!!

Potatoe Soup was a common meal in the cold winter months when I was a kid...I have added cheese because thats the way my husband likes it! There are many variations...but I like to keep it simple!! Here is my recipe!

Ingredients;

5 or 6 medium to large potatoes
5 medium sized yellow cooking onions
1 tsp salt
1 tsp pepper
3 cups grated sharp, old or extra old cheddar cheese
3TBS BUTTER
3TBS flour
2.5 cups of milk

Dice Potatoes and onions to about 1/2 inch cubes..or desired size.
Place potatoes, onions, salt and pepper in crock on high and cover with water..
Simmer until potatoes are soft..about 2 hours.

NOW..make the cheese sauce!

This can be done on the stove top..but I microwave it..
put the bowl with the butter and flour in the micorwave and cook for about a minute and a half...

This Cooks the flour..whisk together and add the milk...whisk well .

Whisk and microwave for 3 minutes..then whisk again...continue in this pattern until sauce is thick and creamy!

Be Careful!! Bowl will be HOT!! When cream sauce is done..and while still hot..stir in the grated cheese..stirring as it melts.

Stir into potatoe broth!!
YUM!

This is WONDERFUL served up hot with  Bacon lettuce and tomate Sandwiches! 
*Warning..Do not over cook r BOIL once sauce is in broth..the cream sauce may seperate*
