Home Made Chicken Noodle Soup

Now...I now this blog is about getting back to basics...and it's turning into a recipe blog..but not really..Learning to cook the old fashioned way IS getting back to basics...and good health starts with good nutrition..At the end of this recipe you will find a link to my youtube page.  There you will find a 7 minute video on How to make Fresh egg noodles for this soup!!

Ingredients;

One Chicken leg with back attached ( or picked over carcass of a previous dinners roasting chicken) When my laying hens are done laying..they will be butchered for just such occaisions!

3 Litres of water
One LARGE yellow onion or 2 medium sized
5 cloves of garlic ( peeled and sliced or minced) OR two teaspoons garlic powder.
4 Stalks of celery
4 medium sized carrots or 3 large
3 medium sized potatoes ( or two large..as in baking potatoe large)
2 tsp salt
1 tsp ground pepper
1TBS parsely

In a crock pot place chicken and water...set on low and let cook overnight..OR put chicken in pot with 3 litres cold water..salt and pepper..bring to a boil...Turn down and allow to simmer until meat slip from bones..( 3 hours approx)
Remove bones..place meat and stalk back into pot/crockpot
add peeled and diced garlic , onions and parsley,
peeled and sliced carrots and peeled and diced potatoes.
Continue to simmer until vegetables are cooked..firm..not soft.
10 minutes before serving add the homemade egg noodles.  OR
2 Cups store bought broad egg noodles.
Allow to simmer 10 minutes.
Serve with buttered bread or bisquits!!
This soup  is served twice a month in my home during cold and flu season..and we rarely get sick! I call it Bevs penicillan!!
