Annettes Million Dollar Relish!

 A HUGE thanks to my Firend Annette out in New Brunswick for submitting this VERY popular recipe!

6 lb. or 8 large cucumbers 1Tbsp. turmeric
2 red peppers 2 Tbsp. mustard seed
3 green peppers 1 Tbsp. celery seed
2 lb. onions 1 qt. vinegar
1/2 gal. water 6 cups white sugar
1/2 cup salt 3 heaping Tbsp. cornstarch

Do NOT peel cucumbers, but take out seeds. Chop cucumbers, peppers and onions in food chopper. Let stand overnight in hot brine of 1/2 gallon hot water and 1/2 cup salt. In the morning, drain and add turmeric, mustard seed. celery seed, vinegar and white sugar. Boil about 15 minutes. Thicken with cornstarch. Cook 10 or 15 minutes or more.
