Zippy pickled tomatoes!

This Recipe makes about 3 litres!
Ingredients
Enough Roma ( paste) tomatoes to fill three, one litre jars.
12 peeled cloves of garlic
2 TBS pickling salt
2 Litres of water
1 cup vinager
6 TBS vegetable oil
3 TBS sugar
3 fresh HOT banana Peppers
3 TBS mixed pickling spice
Wash and rinse three 1 litre mason jars..place in oven at 215 Degrees F for a minimum of 15 minutes..leave them in the hot oven until needed.
Wash , rinse and boil the jar lids and leave in simmering water until needed.
In a Pot, combine
water
vinager
oil
salt and sugar
Bring to a boil.
In the bottom of a hot jar..drop 4 cloves of garlic and 1 TBS pickling spice..pack in tomatoes..at the last..slip in a cleaned and seeded hot pepper point DOWN into jar..then fill to overflowing with boiling brine. Screw on lids good and tight and stand jar upside down on a folded towel until cool.
Do Next Jar.
Made this way the tomatoes retain their shape and colour and will be LOVLEY sliced or diced into a salad come winter!
